Second Day Pot Roast (Serves 4-6)

They’ll never know this is the same meat you cooked a couple of days previous.

leftover pot roast, as above
leftover sauce, as above
2 c. (500 ml) frozen peas
4 green onions
6 mushrooms
2 c. (500 ml) pasta

 

Dice pot roast. Reheat the diced meat in the sauce in the microwave. Add water if needed to achieve the right consistency. Thinly slice mushrooms and add with peas and green onions and heat it all through. Cook pasta. Use fusilli or corkscrew pasta, or shells. Whole wheat varieties are healthy choices. Pour meat, veggies and sauce over pasta and serve.
